Some teams will log over 600 hours of overtime work in a single week during SOBEWFF
SOBEWFF is back this year starting February 18th, but Frederic Delaire, head of the food program at Loews Miami Beach started preparing for SOBEWFF back in November. His team swells from 90 to 200 staff.
This is his tenth year as part of the event, so he’s been around the block. All part of making over 600 meals and dealing with celebrity chefs for the weekend like Guy Fieri, Bobby Flay and Giada De Laurentiis.
